Setting Up An Emergency Pantry, Part 2: Meals
Summer storm season is upon us. Whether it is hurricanes or tornadoes that threaten your area (or both), are you prepared to feed your family for an extended period without power?
The last major outage I experienced lasted almost a week, and after watching a freezer full of food spoil, we lived out of whatever canned food we had around. We couldn’t get new supplies at the grocery store. As a result of this experience, I put together an emergency food plan. In this series, I will cover how I implement my emergency pantry and cooking plan.
Menus
While eating out of a food stash can be a good short term solution, after a few days, eating tinned food gets monotonous. I decided to find some recipes that can be adapted for use in low water, no refrigeration and no power settings.
Creating Your Own Menus
This isn’t hard, but takes a bit of planning. Look through your recipes or the internet for dishes that can be done on the stovetop or grill, requiring canned goods and no refrigerated products. Also keep in mind possible water restrictions.
Pre-made Menus
The best implementation of this I found was the “911 Menu” from SavingDinner.Com. As always, the recipes are provided, along with a shopping list, all put together by a nutritionist so you can be assured it is not junk food.
This particular menu selection provides the following meals: Tuna Casserole, Chicken and Rice, Linguine with Clam Sauce, Crisis Chili, Bean and Rice Burritos, Pepper and Crab Pasta, and Artichoke Chicken Arborio. The meals are quick, easy, and can be made with substitutions (provided) and various cooking methods.
Additional Hints
Whether or not you use your own, write out a shopping list and the recipes and keep these with the recipes. It would not be good to lose power and then discover that your recipes are all on the computer!
